Grand Theft Auto: San Andreas Easter Egg - A Rockstar Memorial
This one is not your typical bonafide "egg" but I feel it's a good mention because the reference seems to be lost on the vast majority of people I tell about it.
In San Fierro there is a broken up stretch of neglected double-decker freeway running parallel to the interstate entering onto the Garver Bridge. This is a direct representation of the aftermath of the Oct. 17, 1989, Loma Prieta Earthquake that shocked San Francisco. There were 67 deaths with 3,757 injured.
The most famous incident was the collapsed Cypress Street Viaduct on the Nimitz Freeway (I-880). 40 of the 67 dead were here - likely the reason for the flowers planted near the site by Rockstar.
Grand Theft Auto 3 Easter Egg - Hint at the Sequel
When coming off of the Callahna bridge ONTO Staunton Island keep going straight until reaching the billboards at the end. One of them says "See You In Miami!" which is of course Rockstar's way of hinting at where the sequel was to take place - Vice City. Miami was my guess all those moons ago but I never anticipated it'd be the 1980s. Fun nonetheless.

In Staunton Island near Liberty Campus there will be a character walking around who looks like a college student with a pony tail and a notebook. If you kill the man, and look at his notebook you will see that it is a drawing of a p*nis ejaculating!
*Note:It's easier to see the drawing if you look at it with a Sniper Rifle.
Grand Theft Auto 3 Easter Egg - GTA 1 and 2 Revisited
This is probably the COOOLEST egg I have seen in a long time. Many people have played the original GTA's (GTA and GTA2), well, if you have, you'll love this. If you have a PC, CRANK UP THE RESOLUTION, this will improve the texture quality, and allow you to see the egg. In your base on staunton island, go up the ramp, turn right, and drive past the park. If you keep going, you will arrive at the raod leading to the bridge, go past this and almost immediately, to the left, you will see a room (a LANcenter actually) which you can enter. Crash through the windows, get out of your car, and go to the computers to your left (Another interesting sidenote for my fellow pervs, the carpet has the logo "TW@" or TW"at" or Twat) and look at the monitors of the ones nearest to the stairs. What's so great about these monitors? They are really screenshots of GTA 1 and 2 (GTA1 is located on the left and GTA2 on the right). I thought this was damn cool!!
